Almond Butter Cookies
This Soft and Chewy Almond Butter Cookies recipe is an easy twist on the classic Peanut Butter Cookie. A light tan in color lends well to the fluffiness you enjoy sinking your teeth and taste-buds into this kid-friendly holiday cookie.Cook Time 14 minutesServings 25 cookies
- 1 jar 16oz jar of smooth Almond Butter
- 1/2 tbsp vanilla extract
- 3/4 cup heavy cream
- 3 cups powdered sugar
- 2 cups flour
- 1-1/2 tsp baking soda
- 2 eggs
Pre-heat oven to 350 F.
In a small to medium sauce pan, over medium-low heat, mix together Almond Butter, vanilla extract and 1/4 cup of heavy cream. As the almond butter begins to loosen and smooth, add the additional heavy cream 1/4 cup at a time.
Add powdered sugar to a mixing bowl. Then add warm Almond Butter mixture to the bowl and stir until combined. Remove one cup of the combined mixture. Set aside to cool completely. *Only one cup of this mixture is needed for this recipe. Use the left over to create either MORE cookies or this recipe.*
In a separate, larger bowl, combine the flour, and baking soda. Mix.
Add the eggs to 1 cup of the sugar mixture from step 3. Then add the sugar mixture to the flour bowl and stir until combined. Mixture will be fluffy in texture.
Using a 1.5 inch mellon-baller or some equivalent, scoop cookie dough and roll into balls. Place them on a parchment lined baking sheet for best results. Using a floured fork, create the signature hashtag mark.
Bake for 12-14 minutes. Enjoy with a glass of milk.
