Being a farm girl myself, I have become accustomed and well versed to making Homemade Mayonnaise from scratch with just a few simple ingredients. This Homemade Mayonnaise is simple, quick, and darn near better than any you’ll find in the store.

Mayonnaise is one of those staple condiments in the U.S. that nearly every household has. While it’s likely in most refrigerators across the country, it’s often very under utilized. There have been a few times where I was getting ready to form a juicy burger, create a potato salad, or some coleslaw for a BBQ and noticed the large jar in the fridge was either missing or moldy. That meant I was driving 30-minutes to the grocery store one way just to get some mayonnaise. Not cool.
Thankfully, I have a wonderful Mom who loves to help me out in these time crunches. She knows the short cuts to everything, I swear! Calming my frantic heart, she would advise a hand blender, mason jar, some farm fresh eggs, good oil, salt, pepper, garlic powder, vinegar, and a bit of honey. Voila! Fresh homemade mayonnaise. You’ll notice in the Homemade Mayonnaise Video below that we even add a bit of dill at the end. Add the dill and omit the honey for a delicious keto friendly homemade mayonnaise or veggie dip.
What are the 3 basic ingredients of mayonnaise?
- Eggs: Farm fresh eggs make a huge difference here, and not just because supporting local is always better. Farm fresh eggs, unlike store bought eggs, have not been aged, subject to pesticides, nor soaked in bleach. Yes, seriously, that is what happens to store bought eggs thanks to the FDA. That’s why you’ll see a huge color difference in the yolks of eggs fresh from a farm compared to that bought at a store.
- Oil: Oil in your homemade mayonnaise recipe is going to be the biggest indicator and decision maker of taste. There is a significant taste difference between mayonnaise made with extra virgin olive oil, vegetable oil, canola oil, etc. For homemade mayonnaise you want a nice delicate flavor in general. In my opinion using oils such as avocado oil, vegetable oil, sunflower oil, and even a light coconut oil would be best. Olive oil tends to overpower the flavor and canola oil has too much of a processed taste.
- Acid: In this recipe we used white vinegar because that is what we had on hand. Just about any acid will do. You only need a little but keep in mind that the acid you choose, much like the oil, will change the taste of your mayonnaise. Instead of white vinegar you could add apple cider vinegar or lemon juice.
- Other: While homemade mayonnaise ingredients are really based upon eggs, a good oil, and an acid such as lemon juice, the other ingredients are necessary for taste. Ingredients such as salt, Dijon mustard, pepper, garlic powder, honey or sugar, and even fresh herbs are essential to creating a well rounded, flavorful homemade mayonnaise recipe and dip base.

Simple, easy, and way better for you than store bought is this homemade mayonnaise.
- 1 egg
- 1 tbsp white vinegar
- 1 cup vegetable or canola oil
- 1/2 tbsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp honey
Add one egg, white vinegar, salt, pepper, and garlic powder to mason jar. Using an immersion blender, blend together.
With blender going, add the oil in a slow steady stream. Continue to move the blender up and down until all oil is incorporated.
Add honey and blend again or mix in with spoon.
