Solve the Monday night dilemma of “what’s for dinner” with a quick and easy spin on Chicken Alfredo. This recipe uses just four ingredients and easily serves a crowd of hungry mouths.
Mondays are usually pretty busy and stressful. Even as a stay-at-home-mom we have cleaning up to do after a weekend of relaxing or family time. I tend to go grocery shopping or hit stores I need to on Mondays. So come dinner time I am scrambling. You would think at some point I would just learn to meal plan on Sundays or some point in the weekend. It’s always one of my goals but just never happens.
Tonight, that’s completely okay. Raiding the pantry and fridge for leftovers and fresh ingredients led to a surprisingly tastey dinner for all to enjoy. Now, I won’t lie – my kids cannot be fooled by bright colors. While some will tell you to add bright and fresh ingredients to entice kids to eat… mine will not. They laugh in the face of danger – and mom. So for them to eat pasta and chicken that has something other than butter on it, I call it a win. For them it was a simple Chicken Alfredo while Travis and I got to endulge in a bit more sophisticated style of the dinner. And what hubby doesn’t appreciate a dish that looks like a lot of thought and work went into it after coming home from a long day at work?
Semi-Homemade Chicken Alfredo
4-6 servings | 30 minutes
- 1 box of Angel Hair Pasta
- 2 Tbsp. Salt for pasta water (optional)
- 2 leftover seasoned Chicken Breast
- 1 package Cherry Tomatoes
- A few sprigs of Thyme for garnish
- 1 jar of Alfredo Sauce
For this recipe we used primarily leftovers.
Cook pasta per box instructions, seasoning the water with salt. Shred pre-cooked chicken. Slice tomatoes and pull off Thyme leaves.
Once pasta is just near done, drain and mix pasta, sauce, and chicken in a skillet on the oven. Once heated through, top with tomatoes and thyme.
