I was super excited to get the opportunity of working with the fine folks over at American Lamb! As you know, this family has a slightly obsessive love for all things lamb. It’s such a special treat for us. So imagine my surprise and pure delight when I got the chance to work with and photograph for American Lamb in trade for some of their delicious product! Gah! I just can’t stop smiling – and it’s not just because my belly is full of this super quick and easy ground lamb recipe.
So, here’s a couple funny little things about this dish and how it came to be. I told American Lamb to surprise me when they asked what cut of meat I wanted to work with. I don’t know why it never occurred to me, but ground lamb is what they sent… I have never cooked with ground lamb before. Insert “oh-crap” emoji. What that led to was a few moments of self-doubt, followed by some pulling up of my big-girl britches and doing some research. I knew I wanted to create a dish that was relate-able, but not one that had been done over and over. I wanted to push the boundaries of this product and my creativity.
Second thing that happened this week was our heating element in our stove broke. When I say broke, I mean the thing snapped right in half! I was getting ready to make some Russian Tea Cakes to settle the sweet tooth this sweet baby is giving me, and turned to see my oven all aglow. At first I didn’t think anything of it. I figured there was a piece of food or tinfoil or something in there that was going to just burn out. However, as I walked over to the stove I could see two places that we legitimately on fire – awesome. Travis and I talked for a few days about what to do. I knew I was going to need a stove and we considered going to Lowe’s and getting one that day. I made the decision that I would use my Crock-Pot, Pressure Cooker, or the stove-top instead and just wait on getting a replacement part for it. Thankfully we have a friend who is an appliance repairman that we could put a call into.
While that totally saved us hundreds of dollars in the long run, the short run of it is my oven is still not fixed. It’s been about a week and between the snow, ordering parts, and what have you, it’s just not fixed yet. Tonight I decided enough was enough. I had cooked an entire chicken on the stove-top last night, so I was determined to create something delicious with this lamb tonight. Wouldn’t you know it – voila! I can honestly say that after making this, trying it, and photographing it, I feel as though I should get a medal or something. Travis was a bit suspicious of the BBQ sauce involved because of the unique taste lamb seems to have. BUT having grown up on venison, I knew the flavors would pair well together; and the Smoked Gouda Cheese just rounded it out beautifully. Needless to say, he won’t be questioning my cooking judgement any time soon.
Smoked Gouda BBQ Ground Lamb Penne
This smokey and sweet spin on a classic like baked ziti, is just what you need for a delicate and unique meat like Ground Lamb from American Lamb.
- 1/2 box Penne Pasta
- 1 lb American Lamb Ground Lamb
- 1/2 Cup Sweet Baby Ray's BBQ Sauce
- 1 Cup Smoked Gouda Cheese
- 1 Onion
Cook the Pasta per box instructions and set aside.
Dice the onion and sauté with ground lamb in a dutch oven over medium heat.
Once onion and lamb are cooked, add pasta, cheese, and BBQ sauce to dutch oven and stir until combined.
Spoon into bowl and top with fresh parsley for color and a hint of freshness. Enjoy!
